INGREDIENTS FOR CHOC CHIP COOKIE
1 tbsp milled flax seeds
3 tbsp water
175g maple syrup
2 tsp vanilla essence
40g coconut oil, softened but not liquid
100g spelt flour (or any flour of choice)
100g oat flour (rolled oats blitzed into a flour)
1 tsp baking powder
pinch of salt
large handful of chopped dark chocolate
INSTRUCTIONS
Preheat your oven to 180*c and line a baking tray with non-stick baking paper
Mix the milled flax seeds with the water and leave to sit for 5 minutes to thicken.
Once thickened, whisk the flax mix, maple syrup, vanilla essence, and coconut oil. Fold in the rest of the ingredients.
Mould into cookies and press down on the baking paper.
Bake in the oven for 17-20 minutes.
Take out and leave to cool.
